  • Chicken: 4 boneless skinless chicken breasts olive oil chili powder ground cumin smoked paprika cayenne pepper optional garlic powder salt freshly ground black pepper juice of 1 lime
  • Spicy Mango & Avocado Salsa: 1 large ripe mango peeled and diced 1 large ripe avocado diced 1/2 small red onion finely chopped 1 small red chili such as jalapeño seeded and finely chopped 1/4 cup fresh cilantro chopped juice of 1 lime salt to taste freshly ground black pepper to taste

Instructions

Step 1:
In a large bowl combine olive oil chili powder cumin smoked paprika cayenne pepper garlic powder salt black pepper and lime juice Add chicken breasts and coat evenly Let marinate for at least 15 minutes
Step 2:
Preheat grill or grill pan to medium-high heat Grill chicken for 6 7 minutes per side or until fully cooked and juices run clear internal temperature should reach 165°F 74°C
Step 3:
While chicken is grilling prepare the salsa In a medium bowl combine mango avocado red onion chili cilantro lime juice salt and pepper Gently toss to mix
Step 4:
Transfer grilled chicken to plates Spoon generous amounts of mango & avocado salsa over each piece
Step 5:
Serve immediately garnished with extra cilantro or lime wedges if desired
