- Lemon zest: Zest of 1 lemon
- Fresh mint: 2 tbsp, finely chopped
- Fresh parsley: 2 tbsp, chopped
- Toasted sliced almonds: 40 g (1/4 cup)
- Fresh lemon juice: 2 tbsp
- Fresh orange juice: 2 tbsp
- Extra-virgin olive oil: 2 tbsp
- Sparkling water: 1 tbsp
- Dijon mustard: 1 tsp
- Honey: 1 tsp
- Salt and freshly ground black pepper: to taste
Instructions
- Combine vegetables:
- In a large bowl, combine the sliced Brussels sprouts, carrot, and red onion.
- Add citrus and zest:
- Add the orange and grapefruit segments, and sprinkle in the lemon zest.
- Make the dressing:
