I wanted a way to enjoy the beloved flavors of an everything bagel with cream cheese without needing a toaster or extra time in the morning. After testing several batches, this muffin recipe nails that savory, pillowy crumb and rich center every time.
Ingredients
- All-purpose flour: 2 cups (250 g)
- Baking powder: 2 tsp
- Baking soda: 1/2 tsp
- Salt: 1/2 tsp
- Eggs: 2 large
- Buttermilk: 3/4 cup (180 ml)
- Vegetable oil: 1/4 cup (60 ml)
- Unsalted butter (melted): 2 tbsp
- Honey: 1 tbsp
- Cream cheese (softened): 8 oz (225 g)
- Fresh chives (optional): 1 tbsp, chopped
- Garlic powder: 1/4 tsp
- Everything bagel seasoning: 2 tbsp
- Sesame seeds (optional): 1 tbsp
Instructions
- Prepare oven and pan:
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.
- Combine dry ingredients:
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Mix wet ingredients:
- In a large bowl, beat the eggs, buttermilk, vegetable oil, melted butter, and honey until combined.
- Make the batter:
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Prepare cheese filling:
- In a small bowl, mix the softened cream cheese with chives (if using) and garlic powder until smooth.
- Assemble muffins:
- Fill each muffin cup halfway with batter. Place about 1 tablespoon of the cream cheese mixture in the center of each, then cover with remaining batter.
- Add topping:
- Sprinkle the tops with everything bagel seasoning and sesame seeds.
- Bake:
- Bake for 20–22 minutes, or until the tops are golden and a toothpick inserted into the muffin part comes out clean.
- Cool and serve:
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly. Enjoy warm or at room temperature.
