The first time I made these Truffled Mushroom Mac Crostini, my friends were amazed by the blend of earthy mushrooms and rich truffle aroma. It became an instant favorite on our party table.
Ingredients
- Crostini: 1 baguette, sliced into 12 thin rounds, 2 tbsp olive oil, 1 garlic clove, halved
- Mushroom Mac: 120 g (4 oz) elbow macaroni, 1 tbsp unsalted butter, 1 tbsp olive oil, 200 g (7 oz) mixed mushrooms (cremini, shiitake, or button) finely chopped, 2 garlic cloves minced, 1 tsp fresh thyme leaves (or 1/2 tsp dried), 1/2 tsp kosher salt, 1/4 tsp black pepper, 80 ml (1/3 cup) heavy cream, 50 g (1/2 cup) grated Gruyère cheese, 2 tbsp grated Parmesan cheese, 1 tsp truffle oil (plus more for drizzling)
- Garnish: Fresh chives finely chopped, Extra Parmesan cheese (optional)
Instructions
- Prepare Crostini:
- Preheat oven to 200°C (400°F). Arrange baguette slices on a baking sheet, brush both sides lightly with olive oil, and bake 8–10 minutes, flipping once, until golden and crisp. While still warm, rub with cut sides of garlic clove. Set aside.
- Cook Macaroni:
- Cook macaroni in salted boiling water according to package instructions. Drain and set aside.
- Sauté Mushrooms:
- In a large skillet over medium-high heat, melt butter with olive oil. Add chopped mushrooms and cook, stirring until they release their moisture and begin to brown, about 5–7 minutes.
- Add Flavorings:
- Add minced garlic, thyme, salt, and pepper. Cook for 1 more minute until fragrant.
- Make Mushroom Mac:
- Lower heat to medium. Stir in cooked macaroni, heavy cream, Gruyère, and Parmesan. Mix until cheese is melted and the mixture is creamy, 2–3 minutes.
- Season and Finish:
- Remove from heat. Stir in truffle oil. Taste and adjust seasoning if needed.
- Assemble Crostini:
- Spoon a generous tablespoon of the mushroom mac mixture onto each crostini. Garnish with chives, extra Parmesan, and a light drizzle of truffle oil if desired.
- Serve:
- Serve immediately while warm.
