# Directions:
01 - Preheat your oven to 425°F. Line a large rimmed sheet pan with parchment paper or foil to simplify cleanup.
02 - In a large bowl, mix olive oil, chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice. Add the chicken pieces and thoroughly coat with marinade.
03 - Spread the marinated chicken over one side of the sheet pan. Distribute bell peppers, red onion, cherry tomatoes, black beans, and corn evenly on the other side. Lightly drizzle vegetables with olive oil and season with salt and pepper.
04 - Roast for 25 to 30 minutes, stirring vegetables halfway through, until chicken is fully cooked, reaching an internal temperature of 165°F, and the vegetables are tender and lightly charred.
05 - While the chicken and vegetables roast, cook the rice and organize all serving ingredients.
06 - Divide rice between four bowls. Layer with roasted chicken, vegetables, black beans, and corn. Top with shredded lettuce, cheese, salsa, sour cream, avocado, cilantro, and lime wedges per preference. Serve alongside tortilla chips or warm tortillas if desired.
