01 - 2 large sweet potatoes, scrubbed

02 - 1 tablespoon olive oil
03 - ½ teaspoon sea salt
04 - ¼ teaspoon freshly ground black pepper
05 - 1 cup shredded sharp cheddar cheese

06 - 2 tablespoons chopped fresh chives or parsley
07 - Optional: ¼ teaspoon red pepper flakes
# Directions:
01 - Set oven to 425°F. Line baking sheet with parchment paper.
02 - Cut sweet potatoes lengthwise into ¼-inch thick slabs.
03 - Arrange sweet potato slices on baking sheet, brush both sides with olive oil and season with salt and pepper.
04 - Roast for 15 minutes, flip slices, then roast an additional 8 to 10 minutes until golden and tender.
05 - Evenly sprinkle shredded cheese over roasted slices, return to oven for 2 to 3 minutes until cheese melts and bubbles.
06 - Remove from oven, transfer to serving platter, sprinkle with herbs and optional red pepper flakes. Serve warm.
