02 - 2 large yellow onions, thinly sliced
03 - 2 medium apples (Honeycrisp or Gala), cored and thinly sliced
04 - 2 tablespoons olive oil
05 - 1 tablespoon unsalted butter
06 - 1 teaspoon fresh thyme leaves
07 - 1/2 teaspoon sea salt
08 - 1/4 teaspoon black pepper
09 - 4 ounces soft goat cheese, crumbled (or substitute ricotta or feta)
10 - 1/2 cup shredded mozzarella or Gruyère cheese

11 - 1 tablespoon honey (optional)
12 - Fresh arugula or microgreens (optional)
# Directions:
01 - Set the oven to 425°F (220°C) to prepare for baking.
02 - Heat olive oil and butter in a large skillet over medium heat. Add thinly sliced onions and cook, stirring occasionally, for 15 minutes until soft and golden brown.
03 - Add the sliced apples to the skillet with onions and cook for an additional 5 minutes until apples are tender. Stir in fresh thyme, sea salt, and black pepper, then remove from heat.
04 - Place the flatbread on a parchment-lined baking sheet.
05 - Evenly sprinkle shredded mozzarella or Gruyère over the flatbread. Layer the caramelized onion and apple mixture atop, then scatter crumbled goat cheese over the surface.
06 - Bake in the preheated oven for 10 to 12 minutes until the cheese melts and the flatbread edges become crisp.
07 - Remove from oven, optionally drizzle honey and scatter fresh arugula or microgreens. Slice and serve warm.
