Cajun Spiced Salmon Salsa (Printable Version)

# What You'll Need:

→ Salmon

01 - 4 salmon fillets (5.3 oz each), skin-on or skinless
02 - 1 tablespoon olive oil
03 - 1 tablespoon Cajun seasoning
04 - 1/2 teaspoon salt
05 - 1/4 teaspoon black pepper

→ Pomegranate Salsa

06 - 1 cup pomegranate seeds
07 - 1/2 cup diced cucumber
08 - 1/4 cup finely chopped red onion
09 - 1/4 cup chopped fresh cilantro
10 - 1 jalapeño, seeded and finely diced
11 - Zest and juice of 1 lime
12 - 1 tablespoon olive oil
13 - 1/4 teaspoon salt

→ To Serve

14 - Lime wedges

# Directions:

01 - Set the oven to 400°F and line a baking tray with parchment paper.
02 - Pat salmon fillets dry, rub with olive oil, Cajun seasoning, salt, and black pepper. Arrange fillets skin-side down on the tray if skin is on.
03 - Bake the salmon for 10 to 12 minutes until opaque and flaky.
04 - In a medium bowl, gently combine pomegranate seeds, cucumber, red onion, cilantro, jalapeño, lime zest and juice, olive oil, and salt.
05 - Remove salmon from oven, plate fillets, and spoon salsa over each. Serve immediately with lime wedges.
