Cajun Sausage Sweet Potato Hash (Printable Version)

# What You'll Need:

01 - 12 oz Cajun-style smoked sausage, sliced into 1/2-inch rounds

02 - 2 medium sweet potatoes (approximately 18 oz), peeled and diced into 1/2-inch cubes
03 - 1 medium red bell pepper, diced
04 - 1 medium green bell pepper, diced
05 - 1 small red onion, diced
06 - 2 cloves garlic, minced
07 - 2 spring onions, sliced for garnish
08 - 2 tablespoons fresh parsley, chopped for garnish

09 - 1 1/2 teaspoons Cajun seasoning, plus additional to taste
10 - 1/2 teaspoon smoked paprika
11 - 1/2 teaspoon salt, to taste
12 - 1/4 teaspoon black pepper
13 - Pinch cayenne pepper (optional, for extra heat)

14 - 2 tablespoons olive oil

# Directions:

01 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced Cajun sausage and cook for 3 to 4 minutes, turning until browned on both sides. Remove sausage and set aside.
02 - Add remaining 1 tablespoon olive oil to the skillet. Stir in diced sweet potatoes and cook for 8 to 10 minutes, stirring occasionally, until starting to soften and become lightly golden.
03 - Mix in the diced red and green bell peppers, red onion, and a pinch of salt. Sauté for 5 to 6 minutes until vegetables are tender.
04 - Stir in minced garlic, Cajun seasoning, smoked paprika, black pepper, and cayenne pepper if desired. Cook for 1 minute to release aromatics.
05 - Return the browned sausage to the skillet and combine fully. Cook for an additional 3 to 4 minutes until sweet potatoes are fork-tender and flavors meld.
06 - Taste the hash and add extra salt or Cajun seasoning if needed.
07 - Remove from heat. Garnish with sliced spring onions and chopped parsley. Serve hot.
