13 - 2 lbs russet potatoes, peeled and cut into fries

# Directions:
01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper and set aside.
02 - In a mixing bowl, toss potato fries with vegetable oil, salt, paprika, and black pepper. Arrange fries in a single layer on the prepared baking sheet. Bake for 25 to 30 minutes, turning halfway through, until fries are crisp and golden.
03 - Pat steak cubes thoroughly dry using paper towels. In a separate bowl, combine Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, and salt. Add steak cubes and toss well to coat evenly.
04 - Heat olive oil in a large cast-iron skillet over medium-high heat. Add steak bites in a single layer, working in batches if necessary. Sear for 1 to 2 minutes per side until deeply browned and cooked to desired doneness.
05 - Add unsalted butter to the skillet and gently toss steak bites until evenly coated and glossy. Remove skillet from heat and top steak bites with chopped fresh parsley.
