01 - 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

02 - 1 cup panko breadcrumbs

04 - 2 tbsp mayonnaise
05 - 1 tbsp Sriracha (optional)
# Directions:
01 - Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
02 - Dredge chicken pieces in panko breadcrumbs, pressing to adhere. Arrange in a single layer on the baking sheet.
03 - Bake for 12 to 15 minutes, turning halfway through, until golden and cooked through (internal temperature 165°F).
