01 - Heat olive oil in a large pot or Dutch oven over medium heat.

03 - Stir in the garlic and cook for 1 minute until fragrant.
04 - Add the chicken breasts, white beans, corn, green chiles, chicken broth, cumin, oregano, chili powder, cayenne, salt, and pepper. Stir to combine.
05 - Bring to a boil, then reduce heat and simmer, uncovered, for 20-25 minutes until the chicken is cooked through.
06 - Remove the chicken and shred it with two forks. Return the shredded chicken to the pot.
07 - Stir in the cream cheese and heavy cream; simmer for another 5 minutes, stirring until the cream cheese is fully melted and the chili is creamy.

# Additional Tips::

01 -
  • The cream cheese melts into this velvety rich broth that feels like a warm hug
  • It comes together faster than you think but tastes like it simmered all day
02 -
  • Let the cream cheese soften completely before adding it or you will spend forever whisking out little lumps
  • The chili thickens as it sits so do not worry if it looks slightly thin right after adding the dairy
03 -
  • Use room temperature cream cheese for the smoothest integration into the hot broth
  • Let the chili rest for 10 minutes off the heat before serving to let all flavors really meld
