# What You'll Need:

01 - 14 ounces extra-firm tofu, pressed and cut into cubes
02 - Cooked jasmine rice, divided for serving

→ Vegetables

03 - 1 bell pepper, sliced
04 - 1 cup snow peas
05 - 1 cup carrots, thinly sliced

→ Sauce

06 - 1/2 cup vegan peanut sauce

# Directions:

01 - Heat oil in a skillet or wok over medium-high heat. Add cubed tofu and sauté until all sides are golden brown. Remove and set aside.
02 - Add bell pepper, snow peas, and sliced carrots to the same skillet. Stir-fry for 3 to 4 minutes until vegetables are tender-crisp.
03 - Return tofu to the skillet and pour in the vegan peanut sauce. Toss thoroughly until tofu and vegetables are well coated and heat through.
04 - Spoon the stir-fry over portions of cooked jasmine rice and serve immediately.
