01 - In a small bowl or liquid measuring cup, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, grated ginger, and sriracha sauce until smooth. If desired, thin the mixture with water to reach a pourable consistency.
02 - In a large mixing bowl, combine chopped cooked chicken, coleslaw mix, grated carrot, chopped cilantro, and roasted salted peanuts. Drizzle the peanut dressing over the mixture and toss thoroughly until all ingredients are evenly coated. Allow the filling to rest for a few minutes to meld the flavors.
03 - Place the tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 30 seconds to soften and make them pliable for wrapping.
04 - Divide the filling evenly among the warmed tortillas. Fold the sides inward, roll each wrap tightly, and serve immediately while fresh.
