01 - Combine shredded cooked chicken with Buffalo hot sauce in a bowl. Mix until thoroughly coated.
02 - Spread butter on one side of each bread slice. Arrange half the bread slices, butter side down, and layer with mozzarella cheese, Buffalo chicken mixture, and blue cheese crumbles or a drizzle of ranch dressing. Close with remaining bread, butter side out.
03 - Heat a skillet over medium heat. Place assembled sandwiches in the skillet and grill for 3 to 4 minutes on each side until bread is golden and cheese is fully melted.
04 - Plate sandwiches while hot. Serve immediately with extra Buffalo sauce or dressing on the side if desired.
