01 - Set oven to 400°F (200°C) and allow to come to temperature.
02 - In a small bowl, combine rosemary, thyme, minced garlic, olive oil, salt, and black pepper.
03 - Rub the herb mixture evenly over both sides of each pork chop.
04 - Arrange pork chops in a single layer on a roasting pan or baking sheet and roast for 20 to 25 minutes, or until internal temperature reaches 145°F (63°C).
05 - Remove from oven and rest for 3 minutes before serving.
