11 - 1/2 teaspoon salt, or to taste
12 - 1/4 teaspoon black pepper

13 - 2 cups baby spinach or chopped kale (optional)
14 - Juice of 1/2 lemon (optional)

# Directions:

01 - Heat a large pot over medium heat. Add a splash of oil or several tablespoons of vegetable broth. Sauté the onion, garlic, and celery (if using) for 3 to 4 minutes until softened.
02 - Incorporate diced carrots, rinsed lentils, cumin, smoked paprika, and dried thyme. Stir for 1 minute to coat the vegetables and lentils evenly with the spices.
03 - Pour in the entire can of diced tomatoes with juices and vegetable broth. Stir thoroughly and bring the mixture to a boil.
04 - Lower the heat to a gentle simmer, cover, and cook for 20 minutes, stirring occasionally. Ensure lentils are tender and add more broth or water if the stew becomes too thick.
05 - Stir in the baby spinach or chopped kale (if using) and cook for an additional 2 to 3 minutes until wilted.
06 - Finish by seasoning with salt, black pepper, and lemon juice to taste. Ladle into bowls and serve hot.
