# Directions:
01 - Heat 1 tablespoon oil in a large skillet over medium-high heat. Add diced chicken breast and sauté until fully cooked, about 6 to 8 minutes.
02 - Add snap peas and sliced red bell pepper to the skillet. Stir-fry for 3 to 4 minutes until vegetables are just tender.
03 - Lower heat to low and stir in Thai peanut sauce. Simmer for 1 to 2 minutes until thoroughly heated.
04 - Serve chicken and vegetables over hot cooked rice. Garnish with chopped fresh cilantro if desired.
