01 - 1 can (15 oz) chickpeas, drained and rinsed
02 - 1 medium zucchini, sliced
03 - 1 red bell pepper, chopped
04 - 1 medium red onion, sliced

06 - 1 teaspoon smoked paprika
07 - 1 teaspoon ground cumin
08 - 1 teaspoon dried oregano
09 - Salt and black pepper, to taste
# Directions:
01 - Set oven temperature to 425°F (220°C) and allow to preheat fully.
02 - Place chickpeas, zucchini, red bell pepper, and red onion in a large mixing bowl.
03 - Drizzle olive oil over the mixture. Sprinkle smoked paprika, cumin, dried oregano, salt, and black pepper. Toss to coat evenly.
04 - Spread the coated chickpeas and vegetables in a single layer on a sheet pan.
05 - Place sheet pan in oven and roast for 25 to 30 minutes, stirring halfway, until vegetables are tender and edges are caramelized.
