# Directions:
01 - Spread butter on one side of each bread slice. Layer mashed potato, bacon bits, and cheddar cheese between unbuttered sides of two bread slices to form each sandwich. Top with remaining slices, buttered sides facing outward.
02 - Preheat skillet over medium heat. Place sandwiches in skillet and cook until bread is golden and cheese has melted, about 3 to 4 minutes per side.
03 - Transfer grilled sandwiches to plates. Top each with a dollop of sour cream and garnish with chopped chives before serving.
