# What You'll Need:

→ Steak Bites

01 - 1.5 lbs sirloin steak, cut into 1-inch cubes
02 - 1 teaspoon salt
03 - 0.5 teaspoon black pepper
04 - 0.5 teaspoon smoked paprika
05 - 2 tablespoons olive oil

→ Lemon Garlic Butter

06 - 4 tablespoons unsalted butter
07 - 4 cloves garlic, minced
08 - Zest of 1 lemon
09 - 2 tablespoons fresh lemon juice
10 - 2 tablespoons fresh parsley, chopped

→ Roasted Brussels Sprouts

11 - 1 lb Brussels sprouts, trimmed and halved
12 - 2 tablespoons olive oil
13 - 0.5 teaspoon salt
14 - 0.25 teaspoon black pepper

# Directions:

01 - Set oven to 425°F and allow to reach full temperature.
02 - Toss Brussels sprouts with olive oil, salt, and pepper. Arrange on baking sheet cut side down. Roast for 20 to 25 minutes, flipping halfway through, until golden with crispy edges.
03 - While sprouts roast, coat steak cubes evenly with salt, black pepper, and smoked paprika.
04 - Heat 2 tablespoons olive oil in large skillet over high heat. Working in batches if needed, sear steak cubes in single layer for 2 to 3 minutes per side until browned. Transfer to plate and cover loosely with foil.
05 - Reduce heat to medium. In same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant. Stir in lemon zest and juice; simmer for 1 minute.
06 - Return steak cubes to skillet and toss to coat thoroughly in lemon garlic butter. Finish with fresh chopped parsley.
07 - Arrange steak bites on plate with roasted Brussels sprouts alongside.

# Additional Tips::

01 -
  • The butter sauce is bright enough to feel light, but rich enough to make every bite memorable.
  • Brussels sprouts transform into something almost candy-like when they caramelize, converting even the skeptics at your table.
  • It's genuinely quick, and there's something satisfying about a complete, restaurant-quality meal that doesn't demand hours of your evening.
02 -
  • Don't skip the step of letting steak sit in a single layer while searing; crowding the pan steams the meat instead of browning it, and you lose half the flavor.
  • Brussels sprouts seem done before they actually are; give them that extra minute or two when their edges look almost burnt, because that's when the transformation from bitter to caramelized happens.
03 -
  • Don't wash your skillet between searing the steak and making the butter sauce; those browned bits stuck to the bottom are liquid gold, and they dissolve into your sauce and make it taste deeper and more complex.
  • If you're serving this to people unfamiliar with keto cooking, lead with the Brussels sprouts; once they taste what you can do with them, the rest of the meal makes sense.
