Honey Nut Granola Clusters (Printable Version)

Crunchy clusters with oats, nuts, and honey baked to golden perfection for breakfast or snacks.

# What You'll Need:

→ Dry Ingredients

01 - 3 cups old-fashioned rolled oats
02 - 1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped
03 - 1/2 cup unsweetened shredded coconut (optional)
04 - 1/3 cup sunflower seeds or pumpkin seeds
05 - 1/2 teaspoon ground cinnamon
06 - 1/4 teaspoon salt

→ Wet Ingredients

07 - 1/2 cup honey
08 - 1/4 cup coconut oil or unsalted butter, melted
09 - 1 teaspoon pure vanilla extract

# Directions:

01 - Preheat the oven to 325°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, mix oats, nuts, shredded coconut, seeds, cinnamon, and salt.
03 - Gently heat honey and coconut oil (or butter) in a small saucepan over low heat until melted and combined. Remove from heat, then stir in vanilla extract.
04 - Pour the warmed wet mixture over the dry ingredients and stir thoroughly until evenly coated.
05 - Spread the mixture evenly on the prepared baking sheet, pressing down gently to form compact clusters.
06 - Bake for 20 to 25 minutes, rotating the pan halfway through baking until golden and fragrant.
07 - Remove from oven and allow to cool completely without stirring. Once firm, break into clusters.
08 - Keep clusters in an airtight container at room temperature for up to two weeks.

# Additional Tips::

01 -
  • The clusters actually stay together instead of crumbling into dust at the bottom of the jar.
  • You control the sweetness, the crunch, and exactly which nuts go in.
  • It makes your kitchen smell better than any candle ever could.
  • One batch lasts nearly two weeks, so you're not constantly remaking it.
02 -
  • Do not stir the granola while it cools, or you'll end up with loose oats instead of clusters.
  • Pressing the mixture down firmly before baking is the only way to get those big, crunchy clumps.
  • If it's not golden enough after 25 minutes, give it another 3 to 5 minutes but watch it closely.
03 -
  • Use a silicone spatula to mix the wet and dry ingredients so nothing sticks to the bowl.
  • Rotate the pan halfway through baking so the edges don't brown faster than the center.
  • Let it cool on the pan for at least 30 minutes before breaking it up, or the clusters won't hold.
