Grilled Veggie and Hummus (Printable Version)

# What You'll Need:

→ Grilled Vegetables

01 - 2 medium zucchinis, sliced lengthwise
02 - 1 large red bell pepper, sliced into strips
03 - 1 medium yellow squash, sliced lengthwise

→ Wrap Assembly

04 - 1 cup hummus
05 - 4 large flour tortillas
06 - 2 tablespoons olive oil
07 - Salt, to taste
08 - Freshly ground black pepper, to taste

# Directions:

01 - Brush the zucchini, red bell pepper, and yellow squash slices with olive oil. Season both sides with salt and freshly ground black pepper.
02 - Preheat a grill or grill pan over medium-high heat. Grill the seasoned vegetables for 3–4 minutes per side, or until tender and slightly charred.
03 - Lay the tortillas flat. Evenly spread a quarter cup of hummus onto each tortilla, leaving a 1-inch border.
04 - Arrange the grilled vegetables over the hummus layer. Roll each tortilla tightly to enclose the filling.
05 - Slice each wrap in half and wrap in foil or parchment paper for ease of serving.
