- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly blended.
- In a separate bowl, whisk the whole milk, eggs, melted unsalted butter, and vanilla extract until thoroughly combined.
- Pour the wet ingredients into the bowl containing the dry ingredients. Gently stir just until the batter comes together; avoid overmixing—some lumps are acceptable.
- Preheat a nonstick skillet or griddle over medium heat. Lightly grease the surface with vegetable oil or butter.
- Ladle approximately 1/4 cup of batter per pancake onto the hot pan. Using the back of a spoon, carefully form ghost shapes by creating a wider top and a tapered or wavy base.
- Allow pancakes to cook until bubbles rise to the surface and the edges appear set, about 2 to 3 minutes. Flip each pancake and cook for an additional 1 to 2 minutes until golden and cooked throughout.
- Transfer finished pancakes to a plate. Continue with the remaining batter, greasing the pan as necessary between batches.
- Place a ghost-shaped stencil over each pancake. Sift powdered sugar over the stencil using a fine-mesh sieve or sifter, then gently lift the stencil to reveal the design.
- Optionally, press small chocolate chips or mini chocolate candies onto each pancake to create eyes and a mouth. Serve immediately.
