# Directions:

01 - Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then reduce heat and simmer for 10 minutes.
02 - Transfer eggs to a bowl filled with ice water and cool for 5 minutes. Carefully peel the eggs.
03 - Slice eggs lengthwise. Gently remove yolks and place them in a medium mixing bowl.
04 - Mash egg yolks with a fork until smooth. Mix in mayonnaise, wasabi paste, rice vinegar, Dijon mustard, salt, and black pepper until creamy.
05 - If desired, add green food coloring to the yolk mixture for enhanced color.
06 - Spoon or pipe the wasabi mixture back into the egg white halves.
