01 - 3 pounds boneless beef chuck roast
02 - 4 large carrots, peeled and cut into 2-inch pieces
03 - 4 medium potatoes, scrubbed and cut into 2-inch chunks
04 - 1 large yellow onion, quartered
05 - 3 cloves garlic, smashed
→ Liquids and Seasonings
06 - 2 cups beef broth
07 - 2 tablespoons Worcestershire sauce
08 - 1 teaspoon dried rosemary
09 - 1 teaspoon dried thyme
10 - Salt, to taste
11 - Ground black pepper, to taste
# Directions:
01 - Pat the beef chuck roast dry with paper towels and season all sides generously with salt and freshly ground black pepper.
02 - Arrange carrots, potatoes, and onion evenly on the bottom of the slow cooker insert.
03 - Place the seasoned roast on top of the arranged vegetables.
04 - Pour beef broth and Worcestershire sauce evenly over the roast. Scatter smashed garlic cloves, rosemary, and thyme around and on top of the meat.
05 - Cover and cook on low heat for 8 to 9 hours, until the roast is fork-tender and vegetables are cooked through.
