Chunky Monkey Overnight Chia Pudding (Printable Version)

Creamy chocolate chia pudding with banana and peanut butter layers. A wholesome, satisfying breakfast or snack.

# What You'll Need:

→ Chia Pudding Base

01 - 3 tablespoons chia seeds
02 - 1 cup unsweetened almond milk
03 - 1 tablespoon pure maple syrup
04 - 2 teaspoons unsweetened cocoa powder
05 - 1/2 teaspoon vanilla extract

→ Banana Layer

06 - 1 large ripe banana, sliced

→ Peanut Butter Layer

07 - 2 tablespoons natural creamy peanut butter

→ Optional Toppings

08 - 2 teaspoons dark chocolate chips
09 - 1 tablespoon chopped roasted peanuts
10 - Banana slices

# Directions:

01 - In a medium mixing bowl, whisk together chia seeds, almond milk, maple syrup, cocoa powder, and vanilla extract until well combined. Allow to sit for 5 minutes, then whisk again to prevent clumping.
02 - Cover the bowl and refrigerate for at least 8 hours or overnight until the mixture thickens to a pudding consistency.
03 - When ready to serve, slice the banana into uniform pieces.
04 - In two jars or glasses, layer half the chia pudding at the bottom, followed by a layer of banana slices and a drizzle of peanut butter. Repeat layers with remaining pudding, banana, and peanut butter.
05 - Top with dark chocolate chips, chopped peanuts, and additional banana slices if desired. Serve chilled immediately.

# Additional Tips::

01 -
  • It tastes like ice cream but keeps you full until lunch without the sugar crash.
  • You make it once before bed and wake up to breakfast already done, no blender or stove required.
  • The layers look impressive enough to serve guests but take less effort than toast.
02 -
  • Whisk twice or the chia seeds clump together in one corner and the rest stays runny, I learned this the hard way on batch number three.
  • Don't skip the five minute rest before the second whisk, it lets the seeds start absorbing so they distribute evenly.
  • Use a jar with a lid if you're taking it to work, I once put it in a bowl with plastic wrap and it leaked all over my bag.
03 -
  • Use a fork to drizzle the peanut butter in thin streams instead of big blobs, it distributes better and looks prettier in the jar.
  • Warm the peanut butter for ten seconds in the microwave if it's too thick to drizzle, it makes layering so much easier.
  • If your chia pudding is too thick in the morning, stir in a tablespoon of milk to loosen it up.
