Avocado BLT Grilled Cheese (Printable Version)

Crispy bacon, creamy avocado, fresh veggies, and melted cheese come together on golden buttery bread.

# What You'll Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper, to taste

# Directions:

01 - Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
02 - Lightly butter one side of each bread slice.
03 - Place two bread slices, buttered side down, on a clean surface. Layer each with a slice of cheese, bacon, lettuce, tomato, and avocado. Season avocado and tomato with salt and pepper. Top with the remaining cheese slices and then the remaining bread slices, buttered side up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown and cheese is melted, about 3–4 minutes per side, pressing gently with a spatula.
05 - Remove from skillet, let cool for 1–2 minutes, slice in half, and serve immediately.

# Additional Tips::

01 -
  • It's crispy, creamy, and hot all at the same time, which somehow makes you feel like you're eating something fancy despite spending fifteen minutes in the kitchen.
  • The avocado softens the richness of the cheese and bacon in a way that makes you want another half just to chase that balance again.
02 -
  • If your avocado is too soft, it will smear and escape; if it's not ripe enough, it tastes like nothing, so aim for that moment when it yields to gentle pressure.
  • The cheese layer touching the bread matters more than you'd think—it creates a seal that keeps the lettuce from making the toast soggy.
03 -
  • Slice the avocado directly into the sandwich rather than slicing it first—it bruises less and stays fresher looking on the plate.
  • A squeeze of fresh lime juice on the avocado (before it goes in the sandwich) brightens the whole thing and keeps the avocado from oxidizing if you're prepping ahead.
